APPLE STRUDEL
For the filling:
3-4 apples, finely sliced
1/3 cup maple syrup
1 teaspoon cinnamon
1 handful raisins previously soaked in water and drained
Grated zest of ½ lemon
1 handful nuts, finely diced
a pinch of salt
a pinch of vanilla
For the pastry:
1 cup wholewheat flour
1 cup flour
A pinch of salt
1/3 cup sunflower oil
2/3 cup water
Mix the flours and salt. Separately mix the oil and water and then add them to the flour. Knead gently with your hands until you get a smooth dough and then let it rest for 30 minutes. Mix all ingredients for the filling and pre-heat the oven at 180°. Cover a surface with a towel and roll out the dough as thinly as possible, helping yourself also with your hands, until you get to a 60x50 cm pastry. Spoon the filling on the long line of the pastry and then, using the towel to help you, roll the pastry into a sausage shape. Brush with some oil and gently transfer the roll on a baking sheet. Bake at 180° for 30-40 minutes until the pastry is gold.
