Roasted cauliflower

In the vegan blogosphere sometimes there are ecipes that become viral and everybody tries them. It’s the case of this roasted cauliflower, a very simple recipe which only requires 3 ingredients, but it’s very tasty.


1 cauliflower

½ cup extra virgin olive oil



Trim away the cauliflower leaves and remove the stem and core going a bit inside (see picture).

Then you can proceed in two ways, I went for the first one :


1. Boil the cauliflower for 15 minutes. Then remove it from the water but be careful to keep the head intact. Dry it and  drizzle olive oil all over it rubbing with your hands or with a brush. Season the entire cauliflower with salt. Place the cauliflower florets-side up on a baking tray covered with baking paper and bake at 175°C for about 1 hour or until soft and golden.


2. As an alternative you can skip boiling it and proceed directly with rubbing the oil and salt and bake for about 90 minutes.


The cauliflower will be ready when soft and golden. You can serve it as a roast with side vegetables.
