Portobello sandwich

For 1 Sandwich:

 

2 slices of wholegrain bread

1 Portobello mushroom

½ Avocado, sliced

½ tomato sliced

Green leaves, e.g. spinach, beets or salad

1 Tablespoon Olive tapenade

 

Grill or roast the Portobello mushroom, then slice it finely and set it aside. Spread the olive tapenade on the bread and then compose your sandwich alternating layers of avocado, Portobello mushroom, tomato and green leaves
