Lassi is a typical Indian drink made with yogurt or curd, ideal for hot Summer days as it is very fresh and thirst-quenching. What I propose is an entirely non-dairy version.
For 1 large serving:
250 g non-dairy yogurt
Half a ripe mango
5-6 ice cubes
Half a glass of water or non-dairy milk
1/8 teaspoon ground cardamom
1 tablespoon maple syrup (optional)
A pinch of salt
Peel the mango and dice it, then blend with all the other ingredients. Add maple syrup or other natural sweetener only if the mango is not sweet enough. Drink immediately.
