Granola

2 cups rolled oats

2 cups buckwheat

1 cup mixed dried berries (cranberries, blueberries, mulberries, goji etc.) and sultanina

1/2 cup walnuts

1/2 cup almonds

1/3 cup sunflowers seeds

1/3 cup sesame seeds

1/3 cup line seeds

1/2 cup sunflower oil

1 cup maple syrup

1/2 teaspoon vanilla powder

A pinch of salt

(feel free to add any other ingredients such as  hazelnuts, dried bananas, dried coconut, dates, dried figs etc.)

Soak the buckwheat in water for a few hours or better overnight. Once ready, wash it through a colander and drain it well.

Mix all the ingredients in a bowl using your hands.

Cover a baking tray with baking paper and spread the granola evenly on it.

Bake at 180°C for 20 minutes, then take it out of the oven, mix it a bit, spread it again evenly on the tray and bake  for another 10-15 minutes or until crispy. Once out of the oven, wait that it cools down before storing in airtight containers.
