    Chili sin carne

    With this week's temperatures in Brussels, I thought we all need a hearthy meal which will warm us up. I love cooking chili sin carne, it's fast (well, if you have all your beans already cooked), tasty and supplies a lot of protein. This is of course my very simple version of it. Enjoy!

     

    1 shallot, finely cut

    200 g smoked tofu, diced

    1 fresh chili pepper, finely cut

    400 g tomato passata

    250 g chickpeas, cooked

    250 g azuki beans, cooked

    250 g blackbeans, cooked

    200 g corn, cooked

    Extra-Virgin olive oil

    Salt

    Pepper

     

    In a pan roast the shallot in a couple of tablespoons olive oil, add chilli pepper and tofu  and roast for another 2 minutes. Add chickpeas, beans and tomato passata and cook for about 20 minutes. Add the corn, season with salt and pepper and cook for another 5 minutes. Serve hot with rice or other grains.
