2 large cauliflowers (each should give you 3-4 steaks)
Any other spices or herbs you like
Preheat the oven at 200°C and line a baking tray with baking paper.
In a small bowl mix the olive oil with salt, peppers and any spice or herbs of your choice and set aside. Remove any outer leaves from the cauliflower, but leave the stem intact. Place on a cutting board and using a large knife, cut into half/1 cm slices. The center few slices should remain more or less intact, but the outer slices will crumble into smaller pieces. You can use these for another dish. Take the intact slices and brush them with the olive oil mix on both sides. Place them on the baking sheet and bake them for about 30 minutes, turning them halfway through, until they are soft. Serve them with your preferred sauce or pesto. I served mine with a carrot chickpeas sauce.
