250 g whole basmati rice
1 tablespoon of turmeric powder
500 g agretti
1 cup pre-shelled peas
Extra virgin olive oil
Cook the basmati rice as per the instructions on the package (normally 2 quantities of water for 1 quantity of rice) adding 1 tablespoon of turmeric powder to the cooking water.
In the meantime, clean the agretti and the peas and sauté them separately in a couple of tablespoons of extra virgin olive oil. Add salt and pepper to your taste. You can add other spices or herbs as you like. Set aside and keep them warm.
Once the rice is ready, season it with a couple of tablespoons of oil. Then, using a round kitchen cutter, plate the rice alternating with layers of vegetables.
If you wish to prepare everything in advance, you can put the dish in the oven for a few minutes before serving.
Remove the rings and serve. I decorated the dish with whole peas and pureed pea cream.
