Seaweed caviar

Did I ever tell you how much I love seaweeds? I learned to use them when I took my macrobiotic training and since then I eat them at least once a week. They are fantastic source of mineral salts and vitamins and they contribute to our wellbeing.

Here is a very simple recipe for you. For the seaweeds you can use a mix of nori, dulse, hijiki, arame, sea lettuce or buy a ready made "seaweed salad".

 

5 Tablespoons of mixed dry seaweeds

Juice of half lemon

3 Tablespoons olive oil

30 g ground hazelnuts

1 Tablespoon soy sauce

1 cm fresh ginger

assafetida

salt

pepper

Soak the seaweeds in a cup water for 15 minutes. Dice the ginger finely.

In a pan heat the olive oil, assafetida and the ginger and roast. Then add the ground hazelnuts and roast again. Remove the seaweeds from the water, dry them and cut them in small pieces and add them to the pan. Add the soy sauce, lemon juice, salt and pepper and mix well. Cook for another few minutes and serve on toasted bread or use to dress noodles or rice.
