Maple glazed carrots

1 kg carrots of various colours

2 tablespoons olive oil

2 tablespoons maple syrup

1 tablespoon mustard






Peel the carrots and if too large, cut them in half lengthwise. In a cup mix the olive oil, maple syrup, mustard, salt and pepper. Lay the carrots on a baking tray and drizzle them with the dressing mix. Add rosemary and thyme to decorate. Bake at 200°C for about 45 minutes or until tender.
