Spicy carrot and red lentil soup
3 carrots, peeled and diced
1 cup of red lentils
1 teaspoon turmeric
1 teaspoon ground ginger
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
a Pinch of Assafetida
3 cups vegetable stock or water (or more if you don't like your soup too thick)
Salt
Pepper
Put all ingredients in a pot and bring to boil. Cover and cook for about 15/20 minutes, then blend and serve hot
